Everyone loves a Baloney sandwich with American cheese and a little mustard.

Salmon Salad Sandwich
An easy to make quick lunch for one or 2 people. Try replacing the pumpernickel bread with whole wheat or multi grain. And, if you make this weeks Hot and easy Salmon for dinner cook an extra peace 4 or more ounces and set aside for lunch.
Lunch for 2:
4 to 6 ounces salmon - wild caught Alaskan or Norwegian (try to avoid farm raised)
1/4 cup minced red onion (or less)
1 tablespoons lemon juice
1/2 tablespoon extra-virgin olive oil
2 tablespoons reduced-fat cream cheese
4 slices pumpernickel bread, toasted
4 slices tomato
1 large leaves romaine lettuce, cut in half
freshly ground pepper to taste
Combine salmon, onion, lemon juice, oil and pepper in a medium bowl. Spread 1 tablespoon cream cheese on each of 2 slices of bread. Spread 1/2 the salmon salad over the cream cheese. Top with 2 tomato slices, a piece of lettuce and another slice of bread.

2 Dashes of lemon juice (more it desired)
1/4 tablespoon extra-virgin olive oil
1 tablespoons reduced-fat cream cheese
2 slices pumpernickel bread, toasted
2 slices tomato
1/2 large leaves romaine lettuce, cut in half
freshly ground pepper to taste
