Ginger-Mango Smoothie
The great thing about this smoothie recipe is it can be made in a large batch and stored in the refrigerator and served anytime. It even makes for a great simple grab-and-go breakfast.
The vanilla yogurt and tofu give it a thick, creamy texture; cardamom, ginger, and mango add a subtle, sweet flavor. From start to finish it should take you about 10 to 15 minutes to make a single 2 serving batch. Double the recipe to make a large batch for quick nutrition and hydration:
1 cup of low-fat vanilla yogurt
1 cup of peeled and chopped mango (about ½ of a mango)
4 ounces soft tofu
2 tablespoon ground flaxseed
1 tablespoon finely chopped crystallized ginger
1 tablespoon flaxseed oil
A pinch of cardamom to taste
Then combine all the ingredients in a blender and mix on the puree or smooth setting until creamy smooth.
Of course, you can use blueberries, apples, pineapple, strawberries, etc. ***Add some spinach to boost the vitamin content and give the smoothie a cool green color!
